Milk and Cookies Anyone!

Easy chocolate chip cookies were on the baking list today. I have had the ingredients out of the pantry everyday this past week and haven't actually got to make them, so back in they went until today. I was determined to bake them as they are so quick and easy to do and taste wonderful.

I don't remember where the original recipe came from, I have scrawled it on a tiny piece of paper, so I am guessing it was off the television or out of a magazine.

Chocolate Chip Cookies

Ingredients

125g butter, melted
1 cup brown sugar
1 cup coconut
1 cup rolled oats
1 cup chocolate chips
1 cup self raising flour


Method


1. Preheat oven to 180C. Line baking trays with baking paper.
2. Melt the butter. Mix all dry ingredients together with a large spoon, add butter. Mix until well combined (I add a touch of milk if the dough is too crumbly).
3. Put rounded tablespoons of dough onto baking trays. Bake for about 10 - 15 minutes until golden brown. Remove from trays onto cooling racks immediately (I use an egg lifter to remove them carefully).


The recipe makes about 40 cookies. I usually put them into snap lock bags and freeze. Once thawed they taste as if they were fresh out of the oven.






Serve with a large glass of icy cold milk or warm hot chocolate, and try to eat just 1, this is the difficult part!!!
